I make these oatmeal bites every week for my kids and husband. They are on high demand in my house. They are so easy to make, and they make for an easy breakfast for my kids and a simple grab-and-go snack for my husband. My son Sammy loves them the most! He does not have a sweet tooth like myself, so sometimes these are even a sweet treat after dinner. Once you make these and see how easy they are and how far they go for a quick breakfast for kids and adults alike you will be hooked. As a full time working mom, wife, and mother of two energetic boys I can appreciate anything that streamlines a meal like breakfast.
Below you will find the recipe. I always double the recipe, because it will last all week for a simple breakfast to pair with homemade juice or a yogurt.
*If you double you will get about 16 sized bites
- 1 cup organic rolled outs
- 1/3 cup chocolate chips
- 1/2 cup organic ground flaxseed
- 1/2 cup peanut butter
- 1/3 cup of honey
- 1 tsp vanilla extract
- dash of cinnamon and sea salt
- Optional: unsweetened shredded coconut

…toss all of the ingredients in a mixer and mix until well combined.
Then I simply use an ice cream scoop or large spoon to grab about 1-2 tablespoons and roll it into a ball. If you are feeling fancy and coconut is your thing, then get crazy and roll them in a small bowl of shredded coconut.
Pop these in the fridge in an airtight container and you are done!
